Popovers for the Weekend

One of my favorite things to do on weekends is to make breakfast for the kids. Most Saturdays you'll find me making pancakes or waffles with Munchkin and Monkey. I love spending time with them this way, teaching Munchkin and Monkey to measure and mix as well as showing them how these basic foods are made from scratch. Cooking and baking with the kids became a tradition when Monkey was little. It helped keep him out of trouble and, at the same time, made it possible for me to get cooking done.

This Memorial Day, I decided to try a different recipe from the book "Pretend Soup and Other Real Recipes" The author, Mollie Katzen wrote the famed Moosewood Cookbook  and has more recently created a series of cookbook for preschoolers and up. With written directions for adults and step-by-step pictures for the kids, following her recipes is easy for everyone. This morning was the perfect time to whip up some of Katzen's Popovers for breakfast. With only four ingredients--and melted butter to keep the dough from sticking--there are few recipes easier to make.

Mollie Katzen's Popovers

Ingredients: 
  • 2 tablespoons butter
  • 2 large eggs
  • 1 cup milk
  • 1 cup flour
  • 1/4 teaspoon salt

To prepare: 
  1. Preheat the oven to 375°F. Melt the butter and then brush it along the insides of a muffin pan.
  2. Crack the eggs into a bowl, pour in the milk, and whisk until slightly combined. Then slowly whisk in the flour and salt.
  3. Pour the batter into each muffin cup until they are filled about 1/2 of the way.
  4. Bake in the oven for 30 minutes. When done remove, and then prick with a fork so they keep their shape. Serve up immediately.

The kids loved brushing the tin with butter, cracking the eggs and whisking the ingredients. I poured the batter into the cups and they watched them rise for much of the 30 minutes it took to bake. When I pulled the popovers out, they were fluffy, egg-y and so delicious that we each had two. The popovers are terrific with jam or dipped in honey.
